Tonight’s dinner was stuffed eggplants or as Armenians call the dish, Imam Bayildi. I’m not sure where this delicious dish originated from, but its a staple in the Armenian cuisine. There are many variations to this dish, some even vegetarian. This is the way I make it and everyone in my family loves it.
