Today’s lunch was pretty simple. I decided to make my favorite chicken salad. Chicken salad can be very versatile and the variations are endless. By adding your favorite herbs, spices, nuts or even fruit can totally change up the salad to your liking. For today’s lunch I decided to keep mine simple. Here’s how I prepared it…
I start off by cutting 2 cooked chicken breasts into cubes or bite size pieces. Chop 1 to 2 stalks of celery. In a medium sized bowl prepare the dressing by mixing together ¼ cup mayonnaise, 1 teaspoon sour cream and ½ teaspoon lemon juice (I avoid adding too much mayo and sour cream). Then add the chopped chicken and celery to the dressing. For extra flavor, I add a couple of dashes of garlic powder and ground ginger. Add some sea salt, black pepper and mix everything together. I love my chicken salad on whole wheat bread with a side of red grapes and spinach. Yum!
